Colorful Crepes

Ingredients
Colorful Crepes:
1/3 cup Suncore Foods® Power Pink Pitaya Pancake and Waffle Powder Mix
1/3 cup Suncore Foods® Ultra Violet Pancake and Waffle Powder Mix
2/3 cup x 2 milk, any kind
Butter or oil for cooking
Strawberry Thyme Glaze:
17g butter
460g strawberries, halved
2 sprigs fresh thyme
5g vanilla extract
Pinch of salt
8g sugar, any kind except powdered sugar
Other:
Cream of choice, quantity as per preference - add sugar/sweetened if needed. Used here, oat whipping cream.
Directions
1. Strawberry Thyme Glaze — Prepare glaze before making the crepes. Heat a pan on medium heat, add butter and spread it around evenly.
2. Thyme — You can use the thyme sprigs as is, or cut the sprig into 3-4 mini-sprigs or use the leaves from the sprigs.
3. Add strawberries and thyme and cook for 2-3 minutes, stirring every 1 minute. Reduce heat to medium-low and add remaining ingredients. Cook for 4-5 minutes or until the strawberries have softened (strawberries will reduce to half in size). Half the mixture should be the softened strawberries and half the mixture should be a glaze (like a strawberry sauce). Remove from heat and set aside.
4. Colorful Crepes — In two separate bowls, combine Suncore Foods® Pancake and Waffle Powder Mix with milk, and set aside for 5 minutes.
5. Rub some butter on a pan or spray some oil (before heating the pan) and heat the pan over medium-low heat.
6. Pour ¼ cup of batter on to the pan and lift the pan off the stove and move it around in a circular motion allowing the batter to spread across the pan in a large circle. Cook until you see air bubbles appearing on the crepe. Flip the crepe and cook for another minute or until the edges start to crinkle. Remove from heat and set aside.
7. Follow the same process and make remaining crepes. Add butter/oil onto the pan as needed.
8. Serve crepes with cream of choice and strawberry thyme glaze.
