Almond Cinnamon Cookies

Ingredients
Almond Cinnamon Cookies:
115g all purpose flour
100g almond flour
1 1/2 tbsp cinnamon powder
80g powdered sugar
30g molasses
80g dairy free butter
2 tsp vanilla extract
1/2 tsp salt
Icing:
40g aquafaba
1/2 tsp cream of tartar
1 tsp vanilla extract
180g sifted powdered sugar
1-5 tsp Suncore Foods® Emerald Pandan Leaf and Midori Jade Matcha Powders
Directions
1. Make the Icing — In a stand mixer, beat aquafaba with cream of tartar and salt until foamy. Add all powdered sugar and beat on low speed until thick. Beat in Suncore Foods® Emerald Pandan Leaf, Midori Jade Matcha Powder, and beat until thickened. Thin the icing with water to the desired consistency if needed.
2. Decorate cookie pieces with royal icing. Let dry completely.
