Vegan Pistachio Matcha Cookies with Berry Jam

Particularly, we are in love with these amazing combination of Vegan Pistachio Matcha Cookies with Berry Jam! These treats are made with berry delicious that you can't resist! What a match-a-made in heaven! They are the perfect treats that you can enjoy during anytime of the day! Made these delightful vegan cookies using our Suncore Foods® Premium Midori Jade Matcha Supercolor Powder and dashes of Suncore Foods® Rose Salt, and we love them so matcha!
120g all purpose flour
60g pistachios, ground
7.5g Suncore Foods® Premium Midori Jade Matcha Supercolor Powder
50g dairy free butter
32g sugar of choice
3 tbsp (42g) soy milk
1 tsp vanilla extract
1/4 tsp Suncore Foods® Rose Salt
1/4 cup homemade or store bought jam
1. In a large bowl cream together sugar and butter. Add in flour, ground pistachio, matcha powder, milk, vanilla. salt and mix until well combined. Wrap cookie dough with cling wrap and refrigerate for 20 mins.
2. Preheat oven to 170c. Lightly flour work surface and rolling pin. Roll dough out onto a piece of parchment paper and cut out the dough using a cookie cutter. Bake for 8-10 minutes until lightly brown at the edges. Allow the cookies to cool on the pan for 5 minutes before transferring to a wire cooling rack.
