Protein Powder Meringue Cookies
A light fluffy delight for your sweet tooth!
10g Suncore Foods® protein powder of your choice
75g egg whites
30g powdered sugar
1. Pre-heat oven to 300°F.
2. Prepare a water bath. In a pot, add enough water to fill half the pot. Bring water to a boil then reduce to a simmer and keeping at a simmer.
3. Combine egg whites and sugar in an electric mixer mixing bowl and place over the water bath. Whisk constantly until egg white mixture reaches 115°F.
4. Transfer bowl to an electric mixer fitted with the whisk attachment and whip until stiff, glossy
5. Pipe meringues to desired shapes and sizes. Load in preheated oven and drop temperature to 200°F and bake until centers are dry approximately 1 hour.
6. Let the cookies cool and decorate with chocolate drizzle.
