No-Bake Velvet Red Beet Cookies

We are obsessed with all things red velvet and naturally, our love affair with red velvet desserts brought us this soft & chewy 15-Minutes No-Baked Red Velvet Cookies with NOG Buttercream Frosting. Incorporated our NEWEST Suncore Foods® Velvet Red Beet Supercolor Powder for the perfect red velvet vibe and top it all off with our NEWEST Suncore Foods® Jasmine & Albizia Superbloom Flowers for the perfect finishing touch. We are stoked!

Ingredients

No-bake cookies:
2 cups blanched almond flour
1/2 cup quick oats
3 tablespoons Suncore Foods® Velvet Red Beet Supercolor Powder
1 tablespoon cocoa powder
Pinch Suncore Foods® Rose Salt
1/3 cup dairy-free chocolate chips
1/3 cup coconut oil, melted
1 teaspoon pure vanilla extract
1/2 cup maple syrup

Nog frosting:
1 cup plant (vegan) butter, softened
3 cups organic powdered sugar
1/2 teaspoon ground nutmeg
Pinch ground cloves
Pinch cinnamon
1 teaspoon pure vanilla extract

Garnish:
Suncore Foods® Jasmine and Albizia Superbloom Flowers

 

Directions

1. Line a large plate or baking tray with parchment paper and set aside. In a large mixing bowl whisk together all of your dry ingredients and then add the coconut oil, vanilla, and maple syrup mix well, until a cookie dough forms.

2. Using your hands or a cookie scoop, form small balls of dough and place on the lined plate or tray and then press each ball into a cookie shape. Freeze for 15 minutes, until firm.

3. They taste delicious without the frosting, but if you'd like to make the frosting, do so while they are setting up and then frost before enjoying!
